Regular Fried Rice & Golden Fried Rice 普通炒饭 & 黄金蛋炒饭

Often we only know the existence of the regular fried rice, where very few realize there is another version of fried rice known as golden fried rice. The regular fried rice is where the rice and eggs are two separated entities whereas the golden fried rice, rice and egg (yolk) as one single entity. Serve 2

Ingredients – Regular Fried Rice

– 1 & 1/2 bowl of chilled rice
– 1 nos of egg
– 1 tbsp of cooking oil
– salt to taste
– pepper to taste

Preparation

  1. Wash 1 cup of rice with water and cook with rice cooker.
  2. Once done, lightly whisk with fork or chopstick and let it chill to room temperature.
  3. Prepare the egg in a container/bowl prior to cooking.

Cooking

  1. Make sure your cooking pan is dry. Otherwise wipe dry with paper towel.
  2. Dip one piece of paper towel (or brush if you have one) with some cooking oil and wipe it onto your cooking pan.
  3. Switch on the heat and set to high heat. Let the oil heat up to smoking point.
  4. Once the oil reaches smoking point, add 1 tbsp of cooking oil and then add the egg in.
  5. Scramble the egg to pieces.
  6. Add in chilled rice and thoroughly stir-fry.
  7. Season with salt and pepper and continue stir-frying as you use your spatula to press and break off any lumpy rice.
  8. Stir-fry until rice begin to jump.
  9. Remove from heat into plate and serve.

– 1 & 1/2 bowl of chilled rice
– 2 nos of egg yolk
– 1 tbsp of cooking oil
– salt to taste
– pepper to taste

Preparation

  1. Wash 1 cup of rice with water and cook with rice cooker.
  2. Once done, lightly whisk with fork or chopstick and let it chill to room temperature.
  3. Separate the egg white and yolk in two different container/bowl prior to cooking. Keep egg white for other uses.

Cooking

  1. Make sure your cooking pan is dry. Otherwise wipe dry with paper towel.
  2. Dip one piece of paper towel (or brush if you have one) with some cooking oil and wipe it onto your cooking pan.
  3. Switch on the heat and set to high heat. Let the oil heat up to smoking point.
  4. Once the oil reaches smoking point, add 1 tbsp of cooking oil and then add the chilled rice in.
  5. Thoroughly stir-fry the rice and then add egg yolk to the rice.
  6. Stir-fry the rice and egg yolk as you mix them together evenly.
  7. Season with salt and pepper and continue stir-frying as you use your spatula to press and break off any lumpy rice.
  8. Stir-fry until rice begin to jump.
  9. Remove from heat into plate and serve.

Tips

  1. The first step of oiling your cooking pan is to season the cooking pan, which lubricate the surface and bringing the oil to smoking point ensure there is no water on it.
  2. Then cool oil are added to bring down the temperature of the cooking pan which also helps in prevent rice from sticking to the pan.
  3. Chilled rice are used instead of hot rice because rice contain starch, starch when cooked at high heat will stick together very easily or immediately.
  4. By start cooking with cool oil, chilled rice and a completely dry pan, the outer layer of rice are sort of like slowly sealed before the starch could stick and lumping the rice together.
